[color=#385500]Amaranth, also spelled Amarant, which means as much as "one that does not wither," or the never-fading (flower) is an herb which has not only inspired poets and writers, but even the Aztecs revered it and used it in their religious ceremonies. It is, even today, sometimes referred to as the crop of the future. In Mexico it is mixed with honey to make a candy called Alegría (Happiness).[/color]
    The protein found in amaranth grain is of an unusually high quality.

    Amaranth grain contains fiber, Vitamin B1, Vitamin B2, Vitamin B3 and Vitamin C, as well as Calcium and Phosphorus.

    It is free of gluten and a ¼ cup of amaranth grain provides you with 60% of the recommended dietary allowance of iron.


    Personally, I use Amaranth as follows.

    [size=85]♦[/size] I like to add it to almost any soup, especially the more neutral soups. A simple noodle soup, for instance, becomes a treat through the addition of amaranth grain.

    [size=85]♦[/size] It is a nice addition to pancakes. Simply add amaranth grain into the batter.

    [size=85]♦[/size] It is an excellent supplement for health bars or Granola bars.

This is so nice presented and with so many useful information that I have already read it few times before answering.
Between family and friends I am well known as a good cook who knows quite a lot about different food and its benefits. I knew about amaranth but not as much as you have written here. I love this suggestion for pancakes.
But what will make this story about this plant to last is the little talk between Amaranth and Rose from Aesop's Fables.
